Summer is here and it’s getting too hot to do a lot of cooking. I wanted something light and refreshing, but with a little bit of kick. I also wanted something that wasn’t going to murder my diet. So I decided on a watermelon salad with mint, red onion, and tomato. I used seedless watermelon in this recipe because it’s sweeter. I actually brought in this salad to a potluck at work one day, but many people complained it was too spicy for their taste. I may have put in too much bird chilies with seeds that day, but I can handle the heat. However, if you can’t and it might be too much for you, you can always omit the bird chilies.
3 cups of Watermelon cubed
1/2 red onion sliced thin
1 tsp of chopped mint
1/2 tsp chopped basil
black pepper and salt to taste
juice of 1 lime
1 tsp thai bird chilies (optional)
1 heirloom tomato chopped and seeds removed
Mix all of the ingredients together in a bowl. Add a pinch of salt and black pepper to taste. Add the chilies ( I like mine hot, but this can be omitted). Chill for 2 hours before serving.
